- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/3 cup honey
- 1/4 cup ketchup
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 cup pineapple chunks
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, honey, ketchup, garlic, and ginger.
- Place chicken in the crockpot and pour the sauce over the top.
- Cook on low for 6 hours or high for 3 hours until chicken is tender.
- Add pineapple chunks in the last 30 minutes of cooking.
- Shred chicken and serve over rice or with vegetables.
Notes
- Adjust sweetness by modifying honey quantity.
- Serve over jasmine rice for a complete meal.
