- 2 chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 teaspoons fajita seasoning
- 2 cups cooked rice or lettuce
- 1 cup shredded cheese
- Fresh cilantro, chopped
- 2 tablespoons olive oil
- Lime wedges for serving
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced chicken and sprinkle with fajita seasoning. Cook until browned and cooked through, about 7-8 minutes.
- Remove chicken and set aside. In the same skillet, add remaining olive oil, peppers, and onions. Sauté until tender, about 5 minutes.
- Return chicken to the skillet with vegetables, toss to combine and heat through.
- Serve the mixture over rice or lettuce, topped with shredded cheese, cilantro, and lime wedges. Enjoy!
