- 4 bone-in chicken thighs
- 1 cup cherry tomatoes
- ½ red onion, sliced
- 1 lemon, sliced
- ½ cup kalamata olives
- 2 tbsp olive oil
- 2 tsp dried oregano
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Combine olive oil, oregano, garlic powder, salt, and pepper in a small bowl.
- Rub the mixture over the chicken thighs.
- Place chicken on a baking sheet and surround with cherry tomatoes, red onion slices, lemon slices, and olives.
- Bake for 35-40 minutes until chicken reaches internal temperature and vegetables are tender.

- Feel free to add sliced bell peppers or zucchini for extra veggies.
- Serve with warm pita bread or rice for a complete meal.
