Instructions
- Season the beef with salt, pepper, and thyme.
- Heat olive oil in a skillet over medium-high heat and sear the beef until browned on all sides, then transfer to the slow cooker.
- Add halved potatoes to the slow cooker.
- Mix melted butter with minced garlic and pour over the beef and potatoes.
- Cook on low for 6-8 hours until beef is tender and potatoes are crispy.
- Garnish with fresh parsley before serving.
