- 2 chicken breasts, sliced
- 2 limes, juice and zest
- 2 tbsp honey
- 1 cup jasmine rice
- 1 ripe avocado, sliced
- 2 tbsp olive oil
- Salt and pepper to taste
- Cilantro for garnish
Instructions
- Cook rice according to package instructions and set aside.
- In a bowl, combine lime juice, zest, honey, salt, and pepper. Marinate the chicken slices in half of this mixture for 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes.
- Assemble the rice stack: place rice in a bowl or mold, top with cooked chicken, then arrange avocado slices on top.
- Garnish with cilantro and optional lime wedges. Serve immediately.
