- 1 lb chicken breasts, sliced
- 1 cup orzo pasta
- 2 cups chicken broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- Fresh herbs for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken slices and cook until browned and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 30 seconds.
- Pour in chicken broth, bring to a boil, then add orzo. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 10 minutes.
- Stir in cooked chicken, cherry tomatoes, and spinach. Cook until vegetables are tender and spinach wilts, about 3-5 minutes.
- Garnish with fresh herbs and serve hot.
