  • 1 lb beef stew meat, cubed
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup green beans, trimmed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef cubes over medium-high heat until browned on all sides.
  2. Add onions and garlic, sauté until fragrant.
  3. Pour in beef broth, bring to a boil, then reduce heat to simmer.
  4. Add carrots, potatoes, celery, salt, pepper, and thyme. Cover and simmer for 1 hour or until vegetables and beef are tender.
  5. Add green beans and cook for another 10 minutes.
  6. Garnish with fresh parsley before serving.
