- 1 lb beef stew meat, cubed
- 3 carrots, sliced
- 3 potatoes, cubed
- 2 celery stalks, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups beef broth
- 1 cup green beans, trimmed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- Fresh parsley for garnish
Instructions
- In a large pot, brown the beef cubes over medium-high heat until browned on all sides.
- Add onions and garlic, sauté until fragrant.
- Pour in beef broth, bring to a boil, then reduce heat to simmer.
- Add carrots, potatoes, celery, salt, pepper, and thyme. Cover and simmer for 1 hour or until vegetables and beef are tender.
- Add green beans and cook for another 10 minutes.
- Garnish with fresh parsley before serving.
Notes
- You can substitute beef with lean ground beef or beef stew meat.
- For thicker soup, mash some potatoes before adding green beans.
