Instructions
- Heat a large pot over medium heat and add sliced kielbasa. Brown for 3-4 minutes.
- Add chopped onion and garlic; sauté until translucent, about 5 minutes.
- Stir in potatoes, carrots, celery, thyme, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 20-25 minutes until vegetables are tender.
- Garnish with fresh parsley before serving.
