- 2 pounds potatoes, diced
- 1 pound beef stew meat, cubed
- 6 slices bacon, chopped
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
- Meanwhile, cook bacon in a skillet until crispy. Remove and set aside.
- In the same skillet, brown beef cubes until cooked through, about 8 minutes.
- Arrange roasted potatoes on a serving platter, top with beef and bacon. Garnish with chopped parsley and serve hot.
Notes
- For extra flavor, add garlic powder or onion powder to the potatoes before roasting.
- Use thick-cut bacon for more crunch.
