- 1 cup sweet corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup mayonnaise or Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, drain and set aside.
- In a large bowl, combine cooked pasta, corn, cherry tomatoes, cilantro, and feta cheese.
- In a small bowl, whisk together mayonnaise (or Greek yogurt), lime juice, olive oil, chili powder, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Serve immediately or chilled for a refreshing summer side.
