Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip zucchini fries into beaten eggs, then coat evenly with breadcrumb mixture.
- Spray the air fryer basket with olive oil spray and place the coated zucchini fries inside in a single layer.
- Air fry for 12-15 minutes, flipping halfway, until golden and crispy.
Notes
- For extra crunch, double coat the zucchini fries.
- Serve with a healthy dip like Greek yogurt or salsa.
