- 1 lb chicken breasts, cooked and shredded
- 1 ½ cups orzo pasta, uncooked
- 2 large onions, thinly sliced
- 3 cups beef or chicken broth
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Heat olive oil in a skillet, sauté onions and garlic until caramelized, about 15 minutes.
- Cook orzo in broth according to package instructions, then combine with shredded chicken, caramelized onions, thyme, salt, and pepper.
- Transfer mixture into a greased baking dish, sprinkle with cheese, and bake for 20-25 minutes until bubbly and golden.
Notes
- For extra flavor, add a splash of balsamic vinegar during caramelization.
- Use rotisserie chicken for quick prep.
