  • 4 large bell peppers (red, yellow, or green)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a skillet, cook ground meat with onion and garlic until browned.
  4. Mix cooked rice, tomato paste, Italian seasoning, salt, and pepper into the meat.
  5. Stuff the peppers with the mixture and place them in a baking dish.
  6. Top with shredded cheese and bake for 25-30 minutes until peppers are tender and cheese is bubbly.
  7. Garnish with fresh parsley before serving.
