- 4 large bell peppers (red, yellow, or green)
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, cook ground meat with onion and garlic until browned.
- Mix cooked rice, tomato paste, Italian seasoning, salt, and pepper into the meat.
- Stuff the peppers with the mixture and place them in a baking dish.
- Top with shredded cheese and bake for 25-30 minutes until peppers are tender and cheese is bubbly.
- Garnish with fresh parsley before serving.
Notes
- Feel free to substitute ground turkey or chicken for beef.
- Add extra herbs or spices for more flavor.
- Can be prepared ahead and baked later.
