- 8 oz rice noodles or Asian stir-fry noodles
- 2 tablespoons vegetable oil
- 1 cup sliced bell peppers
- 1 cup shredded carrots
- 2 green onions, sliced
- Sesame seeds for garnish
- Soy sauce or hoisin sauce for drizzling
Instructions
- Cook potstickers according to package instructions, then set aside.
- In a large skillet, heat vegetable oil over medium-high heat.
- Add sliced vegetables and stir-fry until tender, about 3-4 minutes.
- Meanwhile, cook noodles according to package, drain and set aside.
- Add cooked noodles to the skillet with vegetables, toss to combine and heat through.
- Serve noodles topped with crispy potstickers, sliced green onions, sesame seeds, and drizzle with soy or hoisin sauce.
Notes
- You can substitute fresh vegetables with frozen or pre-cut veggies for faster prep.
- For extra flavor, add a splash of sesame oil or sriracha.
