- 4 large potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 tomatoes, diced
- 1/2 cup sour cream
- Jalapeno slices for garnish
Instructions
- Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Roast for 25-30 minutes until crispy.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Add taco seasoning and cook according to package instructions.
- Assemble the bowls by dividing roasted potatoes, seasoned beef, shredded cheese, lettuce, and diced tomatoes.
- Top with sour cream and jalapenos. Serve immediately and enjoy!
Notes
- You can substitute ground chicken or turkey for beef for a lighter version.
- Adjust spice levels by adding more jalapenos or hot sauce.
