- 4 large bell peppers, halved and seeded
- 1 lb ground beef
- 1 cup cooked rice
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef until browned. Add onion, garlic, paprika, salt, and pepper; cook until onion is soft.
- Mix cooked rice into the beef mixture. Stuff each bell pepper half with the mixture.
- Place stuffed peppers in a baking dish, top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with chopped parsley before serving.
Notes
- You can substitute ground turkey or chicken for beef.
- For a vegetarian version, use lentils or beans instead of meat.
