- 1 lb ground beef
- 1 can kidney beans, drained
- 1 can corn kernels
- 1 can diced tomatoes
- 1 cup beef or chicken broth
- 1 packet taco seasoning
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- In a large pot, cook ground beef over medium heat until browned.
- Add taco seasoning, diced tomatoes, beans, corn, and broth. Stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, topped with shredded cheese and cilantro.
Notes
- You can add chopped onions or peppers for extra flavor.
- Use a slow cooker for easier prep: combine ingredients and cook on low for 6 hours.
