Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes until cooked through, then remove and set aside.
  3. In the same pot, sauté onions and garlic until fragrant.
  4. Add tomato paste, thyme, salt, and pepper; cook for 2 minutes.
  5. Pour in beef broth and bring to a simmer.
  6. Return beef to the pot, add carrots, potatoes, and celery.
  7. Cover and simmer for 1.5 to 2 hours until beef is tender.
  8. Adjust seasoning and serve hot with fresh bread.
