- 2 lbs beef chuck, cut into cubes
- 3 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes until cooked through, then remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add tomato paste, thyme, salt, and pepper; cook for 2 minutes.
- Pour in beef broth and bring to a simmer.
- Return beef to the pot, add carrots, potatoes, and celery.
- Cover and simmer for 1.5 to 2 hours until beef is tender.
- Adjust seasoning and serve hot with fresh bread.
Notes
- For extra flavor, add a splash of red wine during simmering.
- Use bone-in beef for richer broth.
