- 1 lb (450g) thinly sliced beef or steak strips
- 1 cup shredded provolone or mozzarella cheese
- 1/2 cup sliced green peppers
- 4 large low-carb tortillas or lettuce wraps
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: onions, mushrooms
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium-high heat. Sauté beef until cooked through, about 3-4 minutes. Season with salt and pepper.
- Add sliced peppers (and onions/mushrooms if using) to the skillet and cook for 2-3 minutes until tender.
- Lay out tortillas and evenly distribute the beef mixture onto each.
- Sprinkle shredded cheese over the filling and roll up tightly.
- Place rolls seam-side down on a baking dish. Bake for 10-12 minutes until cheese is melted and edges are crispy.

- Use thinly sliced beef for quick cooking and maximum flavor.
- Add hot sauce or your favorite spices for extra zest.
