- 1 lb ground beef
- 1 cup diced onions
- 1 cup chopped bell peppers
- 1 can corn, drained
- 1 can green beans, drained
- 2 cups mashed potatoes or potato slices
- 1 cup shredded cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and cook ground beef until browned. Add onions, bell peppers, salt, and pepper; cook until tender.
- Layer cooked beef mixture in a baking dish. Spread corn and green beans evenly over the beef.
- Top with mashed potatoes or potato slices, followed by shredded cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly. Serve hot.
Notes
- Feel free to substitute vegetables with your favorites like peas or carrots.
- Leftovers can be refrigerated and reheated easily.
