- 1 pound boneless, skinless chicken breasts
- 1 (9 oz) package of refrigerated tortellini
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place chicken breasts in the slow cooker and season with salt, pepper, and Italian seasoning.
- Add chicken broth and cook on low for 4-6 hours until chicken is tender.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Add garlic, heavy cream, Parmesan, and tortellini. Stir well.
- Cover and cook on high for 15-20 minutes until tortellini is tender and sauce is heated through.
- Garnish with fresh basil and serve hot.
Notes
- Use refrigerated tortellini for the best texture. Freeze-dried can also be used but may require adjusted cooking time.
- Feel free to add vegetables like spinach or peas for extra nutrition.
