Instructions
- In a large pot, sauté onion, carrots, and celery until tender.
- Add garlic and cook for 1 minute.
- Stir in chicken broth and bring to a boil.
- Reduce heat and add shredded chicken, thyme, salt, and pepper; simmer for 10 minutes.
- Stir in heavy cream and heat through.
- Serve hot topped with puff pastry crumbles or pie crust pieces.

- Use cooked rotisserie chicken for quick preparation.
- For a gluten-free version, omit the crust or use gluten-free pastry.
