- 1 lb chicken breasts, cut into bite-sized pieces
- 2 cups orzo pasta
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 4 cups chicken broth
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning and cook until browned. Remove and set aside.
- In the same skillet, sauté garlic and bell peppers until tender.
- Add chicken back to the skillet, then stir in chicken broth and bring to a boil.
- Stir in orzo pasta, reduce heat, cover, and simmer until pasta is cooked and liquid is absorbed, about 10 minutes.
- Garnish with chopped parsley before serving.
Notes
- Adjust Cajun seasoning to taste for more or less spice.
- For a creamier version, stir in a splash of cream before serving.
