Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 2 cups orzo pasta
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 cups chicken broth
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning and cook until browned. Remove and set aside.
  2. In the same skillet, sauté garlic and bell peppers until tender.
  3. Add chicken back to the skillet, then stir in chicken broth and bring to a boil.
  4. Stir in orzo pasta, reduce heat, cover, and simmer until pasta is cooked and liquid is absorbed, about 10 minutes.
