Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine melted butter, buttermilk, eggs, and vanilla. Mix well.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. In another bowl, beat cream cheese with powdered sugar until smooth.
  6. Pour half of the batter into the prepared loaf pan. Spread cream cheese mixture over it, then layer with remaining batter. Gently swirl with a knife.
  7. Gently fold blueberries into the batter. Pour evenly into the pan.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before slicing and serving.

  • Serve with a dusting of powdered sugar or a dollop of whipped cream for extra indulgence.
