- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- In a bowl, toss shredded chicken with barbecue sauce until well coated.
- Heat a skillet over medium heat and brush lightly with olive oil.
- Place one tortilla on the skillet, sprinkle with cheese, and spread BBQ chicken evenly over half of the tortilla.
- Fold the tortilla over to enclose the filling and cook until golden brown and the cheese melts, about 3-4 minutes per side.
- Repeat with remaining tortillas. Slice into wedges and garnish with fresh cilantro before serving.
Notes
- For extra flavor, add diced onions or jalapenos inside the quesadilla.
- Can be made ahead and reheated in the oven or skillet.
