- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon

- 1/2 cup brown sugar
- 1 teaspoon cinnamon (for streusel)
- 1/2 cup rolled oats
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
- In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
- Gradually mix dry ingredients into wet until just combined.
- In a small bowl, combine brown sugar, cinnamon, oats for streusel topping.
- Drop tablespoon-sized dough onto prepared baking sheets. Sprinkle streusel on top of each cookie.
- Bake for 12-15 minutes or until golden brown. Let cool before serving.
Notes
- For extra flavor, add a teaspoon of instant coffee granules to the dough.
- Store cookies in an airtight container for up to 3 days.
