Ingredients

  • 1 sheet puff pastry, thawed
  • 4 slices cooked ham
  • 1 cup grated Gruyère or Swiss cheese
  • 4 large eggs
  • 1 tbsp Dijon mustard
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). On a lightly floured surface, roll out puff pastry to smooth thickness.
  2. Cut into 4 squares and place on a baking sheet lined with parchment paper.
  3. Spread Dijon mustard on each pastry square. Top with ham slices and grated cheese.
  4. Bake for 15-20 minutes until golden and puffed.
  5. While baking, fry eggs in butter until whites are set and yolks are runny. Season with salt and pepper.
  6. Remove pastries from oven and top each with a fried egg. Garnish with parsley. Serve immediately.
