- 10-12 egg roll wrappers
- Oil for frying
Instructions
- Preheat oil in a deep skillet over medium-high heat.
- In a mixing bowl, combine corn, black beans, cheese, rice, cilantro, chili powder, and cumin.
- Place an egg roll wrapper on a flat surface, add about 2 tablespoons of filling, fold in the sides, and roll tightly.
- Seal the edge with a dab of water.
- Fry the egg rolls in hot oil until golden brown, about 3-4 minutes.
- Drain on paper towels and serve warm.

- Can be baked at 400°F for 15-20 minutes for a healthier option.
