- 2 large zucchinis, sliced into 1/4 inch rounds
- 1/2 cup grated parmesan cheese
- 1 cup breadcrumbs
- 2 tablespoons olive oil

- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, combine breadcrumbs, parmesan cheese, garlic powder, Italian herbs, salt, and pepper.
- Brush zucchini slices with olive oil, then dip into the breadcrumb mixture, pressing slightly to coat.
- Arrange coated zucchini slices on the prepared baking sheet.
- Bake for 15-20 minutes until golden and crispy.
- Serve warm, garnished with additional parmesan or herbs if desired.
Notes
- Feel free to add a dash of paprika for extra flavor or swap panko for regular breadcrumbs for different textures.
