Ingredients

- 2 cans (15 oz each) white beans, drained and rinsed
- 4 slices bacon, cooked until crispy
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 teaspoon thyme
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Cook bacon until crispy and set aside.
- In the same skillet, sauté onion and garlic until fragrant.
- Add beans, broth, thyme, salt, and pepper. Simmer for 20 minutes.
- Use an immersion blender to puree until smooth.
- Stir in heavy cream and top with crumbled bacon.
- Serve hot with additional herbs if desired.
Notes
- For extra flavor, add a splash of lemon juice or a dash of smoked paprika.
- Can be made vegan by using plant-based bacon and cream alternatives.
