- 2 pounds beef chuck roast, cut into chunks
- 1 cup red wine
- 1 onion, sliced
- 2 carrots, sliced
- 1 cup pearl onions
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 cup beef broth
- 2 teaspoons thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Season beef chunks with salt and pepper.
- Place beef, sliced onions, carrots, pearl onions, garlic, and tomato paste into the slow cooker.
- Pour in red wine and beef broth, add thyme and bay leaf.
- Cook on low for 7-8 hours until beef is tender.
- Remove bay leaf, adjust seasoning, and serve hot garnished with fresh herbs.
Notes
- Best served with crusty bread or mashed potatoes.
- You can substitute red wine with beef broth for a non-alcoholic version.
