- 2 lbs boneless, skinless chicken breasts or thighs
- 1 lb baby potatoes, halved
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 1/2 cup melted butter
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken and potatoes into the crockpot, season with salt, pepper, and Italian seasoning.
- In a bowl, mix garlic, Parmesan, heavy cream, and melted butter. Pour over chicken and potatoes.
- Cook on low for 6 hours or until chicken is tender and potatoes are cooked through.
- Shred the chicken slightly, stir well to combine flavors, garnish with parsley before serving.
Notes
- You can use thighs for more juiciness.
- Serve with crusty bread or steamed vegetables for a complete meal.
