- 4 tbsp unsalted butter
- 1 large onion, chopped
- 6 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
- Crispy bread or croutons for serving
Instructions
- In a large pot, melt butter over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for another 2 minutes, stirring frequently.
- Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Use an immersion blender or transfer to a blender to puree until smooth.
- Stir in heavy cream, season with salt and pepper, and warm through.
- Serve hot, garnished with fresh herbs and a side of crispy bread or croutons.
Notes
- You can substitute heavy cream with coconut milk for a dairy-free version.
- For a thicker soup, reduce the broth slightly before blending.
