- 1 large head cauliflower, cut into florets
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/2 cup Greek yogurt or sour cream
- 2 tbsp melted butter
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Steam or microwave cauliflower florets until tender, then drain well.
- In a large bowl, combine shredded chicken, buffalo sauce, Greek yogurt, melted butter, garlic powder, onion powder, salt, and pepper.
- Mix in the cooked cauliflower until well coated.
- Transfer mixture to the prepared baking dish, spreading evenly.
- Top with shredded cheese and bake for 20-25 minutes until bubbly and golden.
- Garnish with fresh herbs and serve hot.
Notes
- Use hot buffalo sauce for more spice.
- For a lighter version, substitute Greek yogurt for sour cream and reduce cheese amount.
