- 1 pound cooked turkey, shredded
- 2 cups prepared stuffing
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup bread crumbs
- 2 eggs, beaten
- Olive oil spray for baking
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine cooked turkey, stuffing, cranberries, parsley, thyme, salt, and pepper.
- Mix in bread crumbs and beaten eggs until well combined.
- Shape mixture into 1-inch balls and place on the prepared baking sheet.
- Spray tops lightly with olive oil and bake for 20-25 minutes until golden brown.
Notes
For extra flavor, add a dash of balsamic glaze before serving. Can be prepared ahead and refrigerated; reheat in the oven before serving.
