- 1 cup unsalted butter, cold
- 1 cup fresh cranberries
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/2 cup freshly squeezed lemon juice
- 2 teaspoons lemon zest
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press into a lined baking dish and bake for 15 minutes.
- In a saucepan, combine cranberries, sugar, cornstarch, lemon juice, and zest. Cook over medium heat, stirring until thickened and cranberries burst, about 5-7 minutes.
- Pour the cranberry-lemon filling over the baked crust. Return to oven and bake for an additional 20 minutes. Cool before slicing and serving.

- Best served chilled for a firmer texture.
- Garnish with additional lemon zest or fresh mint leaves for presentation.
