  • 1/2 cup powdered sugar

  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 cup freshly squeezed lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press into a lined baking dish and bake for 15 minutes.
  2. In a saucepan, combine cranberries, sugar, cornstarch, lemon juice, and zest. Cook over medium heat, stirring until thickened and cranberries burst, about 5-7 minutes.
  3. Pour the cranberry-lemon filling over the baked crust. Return to oven and bake for an additional 20 minutes. Cool before slicing and serving.
