Ingredients

  • 1 pound Italian sausage, sliced
  • 1 pack tortellini (about 9 oz)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups spinach or kale
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned.
  2. Add diced onion and garlic, sauté until translucent.
  3. Pour in chicken broth and bring to a simmer.
  4. Add tortellini and cook according to package instructions, about 3-4 minutes.
  5. Stir in heavy cream and greens; cook until greens wilt and soup is heated through.
  6. Season with salt and pepper. Serve hot with crusty bread.
