- 1 pound Italian sausage, sliced
- 1 pack tortellini (about 9 oz)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups spinach or kale
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned.
- Add diced onion and garlic, sauté until translucent.
- Pour in chicken broth and bring to a simmer.
- Add tortellini and cook according to package instructions, about 3-4 minutes.
- Stir in heavy cream and greens; cook until greens wilt and soup is heated through.
- Season with salt and pepper. Serve hot with crusty bread.
Notes
- Feel free to add a pinch of red pepper flakes for spice.
- You can use spinach or kale depending on preference.
