- 1 cup wild rice
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Cook wild rice according to package instructions and set aside.
- Heat olive oil in a large pot. Sauté onion, carrots, and celery until tender.
- Add garlic and cook for another minute.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Stir in cooked wild rice and heavy cream. Season with thyme, salt, and pepper.
- Simmer for an additional 10 minutes before serving hot.
Notes
- You can substitute vegetable broth with chicken broth for a different flavor.
- Add chopped cooked chicken for extra protein.
