- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1 cup chocolate chunks
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
- Fold in oats, chocolate chunks, and pecans.
- Scoop dough onto prepared baking sheets, leaving space between each.
- Bake for 10-12 minutes, or until edges are golden brown. Let cool slightly before transferring.
Notes
- For extra crunch, add a handful of chopped walnuts or substitute pecans with your favorite nuts.
- Make sure to NOT overbake to keep cookies soft and chewy inside.
