These cowboy cookies are loaded with chocolate chunks and crunchy pecans, baked to perfection for a melt-in-your-mouth treat that hits all the right notes.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup chocolate chunks
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
  5. Fold in oats, chocolate chunks, and pecans.
  6. Scoop dough onto prepared baking sheets, leaving space between each.
  7. Bake for 10-12 minutes, or until edges are golden brown. Let cool slightly before transferring.

Notes

  • For extra crunch, add a handful of chopped walnuts or substitute pecans with your favorite nuts.
  • Make sure to NOT overbake to keep cookies soft and chewy inside.
