Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup graham cracker crumbs
  • 2 cups mini marshmallows
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Beat butter, brown sugar, and granulated sugar until creamy. Add eggs one at a time, then vanilla.
  3. In a separate bowl, whisk flour, baking soda, salt, and graham cracker crumbs. Gradually mix into wet ingredients.
  4. Fold in chocolate chips and mini marshmallows.
  5. Scoop dough onto baking sheets, flatten slightly. Bake 10-12 minutes or until edges are golden and marshmallows are toasted.
  6. Allow cookies to cool slightly before transferring to a wire rack.

Notes

  • For extra toasted marshmallows, broil cookies for 30 seconds after baking.
  • You can substitute large marshmallows for mini ones.
