- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup graham cracker crumbs
- 2 cups mini marshmallows
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Beat butter, brown sugar, and granulated sugar until creamy. Add eggs one at a time, then vanilla.
- In a separate bowl, whisk flour, baking soda, salt, and graham cracker crumbs. Gradually mix into wet ingredients.
- Fold in chocolate chips and mini marshmallows.
- Scoop dough onto baking sheets, flatten slightly. Bake 10-12 minutes or until edges are golden and marshmallows are toasted.
- Allow cookies to cool slightly before transferring to a wire rack.
Notes
- For extra toasted marshmallows, broil cookies for 30 seconds after baking.
- You can substitute large marshmallows for mini ones.
