Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
- Add the egg, vanilla, and peanut butter; beat until combined.
- In a separate bowl, mix the oats, flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Stir in chocolate chips.
- Drop spoonfuls of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes or until edges are golden brown.
- Allow cookies to cool on wire racks before serving.

- For extra flavor, add chopped nuts or shredded coconut.
