- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- Cream together butter and sugar until fluffy. Beat in eggs one at a time.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon.
- Gradually mix dry ingredients into wet until combined.
- Mix remaining cinnamon with extra sugar for coating.
- Roll dough into 1 1/2-inch balls, then coat in cinnamon sugar mixture.
- Place on baking sheet about 2 inches apart. Flatten slightly if desired.
- Bake for 10-12 minutes until edges are set and centers are soft.
- Cool on wire racks before serving.
Notes
- Use fresh baking soda for best rise.
- Cookies will be soft and chewy; let cool slightly before transferring.
