Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, combine mashed bananas, eggs, vegetable oil, and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, sugar, and brown sugar.
  4. Gradually add dry ingredients to wet, mixing until just combined.
  5. Fold in shredded carrots and chopped walnuts.
  6. Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Allow to cool before frosting with cream cheese or serving plain.

Notes

  • Use ripe bananas for extra sweetness.
  • Chop nuts finely if preferred.
  • Frost with cream cheese frosting for a richer flavor.
