Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, combine mashed bananas, eggs, vegetable oil, and vanilla extract.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, sugar, and brown sugar.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in shredded carrots and chopped walnuts.
- Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow to cool before frosting with cream cheese or serving plain.
Notes
- Use ripe bananas for extra sweetness.
- Chop nuts finely if preferred.
- Frost with cream cheese frosting for a richer flavor.
