- 1 pound dried red beans
- 1 smoked sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 4 cups chicken broth
- 2 cups long-grain white rice
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Soak the red beans overnight and drain.
- In a large pot, cook sliced sausage until browned. Remove and set aside.
- In the same pot, sauté onions, bell peppers, and garlic until tender.
- Add soaked beans, Cajun seasoning, and chicken broth. Bring to a boil.
- Reduce heat and simmer for about 2 hours until beans are tender, stirring occasionally.
- Meanwhile, cook rice according to package instructions.
- Serve the bean mixture over rice, garnished with chopped green onions.

- Adjust seasoning to taste for spiciness.
- Using canned beans can reduce cooking time.
