- 2 lbs beef chuck, cut into chunks
- 2 tablespoons paprika
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 cups beef broth
- 1 can diced tomatoes (14 oz)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef chunks until browned on all sides, then remove and set aside.
- Sauté onions and garlic until translucent.
- Add paprika and cook for 1 minute.
- Return beef to the pot, add bell pepper, diced tomatoes, and beef broth.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Season with salt and pepper, garnish with parsley, and serve hot.

- Allow enough simmering time for meat to become tender.
